GEFRO’s fine, exquisite Aceto Balsamico di Modena IGP originates from Savignano sul Panaro, in the Modena region, the area of Italy that can truly be called the heart of the Balsamic vinegar production. Only vinegars that really come from this region, or in more seldom cases, from the Emilia Region, can obtain the name Aceto Balsamico di Modena, with the addition of IGP. IGP stands for “Indicazioni Geografica Protetta” = protected geographical region and guarantees the products’ authenticity. An Aceto Balsamico di Modena IGP only obtains this authenticity stamp if the strict quality criteria regarding cultivation, type of grape used, production and aging process of the grape must and vinegar are fulfilled.

The typical Balsamic features are tested: the dark and bright colour, the aroma and of course, the flavour. The product is only certified by an independent certification body nominated by the Italian Ministry of Agricultural, Food and Forestry Policies after it has passed the aforementioned quality inspection. The strict regulations begin already with choosing the type of grape allowed for the production of a high-class Balsamic vinegar. Only 7 kinds of grape fulfil the high quality criteria and have been approved for use by the CONSORZIO TUTELA: grapes of the vine varieties Lambrusco, Sangiovese, Trebbiano, Albana, Ancellotta, Fortana and Montuni.

In accordance with tradition, the only ingredients of an excellent Balsamic are boiled-down grape must and spirit vinegar. Oak, cherry and chestnut wood barrels are often used to age Aceto Balsamico di Modena IGP. The vinegar absorbs the aroma of the wood used during the aging process. In this way, the type of wood used also contributes to the unique aroma and flavour of the Balsamic vinegar.
