Certified quality

GEFRO’s fine, exquisite Aceto Balsamico di Modena IGP originates from Savignano sul Panaro, in the Modena region, the area of Italy that can truly be called the heart of the Balsamic vinegar production. Only vinegars that really come from this region, or in more seldom cases, from the Emilia Region, can obtain the name Aceto Balsamico di Modena, with the addition of IGP. IGP stands for “Indicazioni Geografica Protetta” = protected geographical region and guarantees the products’ authenticity.

An Aceto Balsamico di Modena IGP only obtains this authenticity stamp if the strict quality criteria regarding cultivation, type of grape used, production and aging process of the grape must and vinegar are fulfilled. The typical Balsamic features are tested: the dark and bright colour, the aroma and of course, the flavour. The product is only certified by an independent certification body nominated by the Italian Ministry of Agricultural, Food and Forestry Policies after it has passed the aforementioned quality inspection. The strict regulations begin already with choosing the type of grape allowed for the production of a high-class Balsamic vinegar. Only 7 kinds of grape fulfil the high-quality criteria and have been approved for use by the CONSORZIO TUTELA: grapes of the vine varieties Lambrusco, Sangiovese, Trebbiano, Albana, Ancellotta, Fortana and Montuni.

Another quality characteristic is the thick, syrup-like consistency of a real Aceto Balsamico di Modena IGP, which is reflected in its density gradiant. Its density must not lie under 1.240 g/ml, a basic rule is: the higher the density, the higher the quality of this liquid seasoning. GEFRO’s Aceto Balsamico di Modena IGP’s high density of 1.335 g/ml is a clear indicator of its excellent quality.

Traditional Production Process

The real secret to the delectable taste of Aceto Balsamico di Modena IGP however, lies in the producers’ passion for their product and in the observing the rules of this Italian art form of vinegar making. Nowhere else in the world is this traditional art mastered so perfectly as here, in the regions surrounding the Italian province of Modena that lies in the Emilia Romagna region which is famous for its vinegar making skills.

The recipe and the manufacturing and production knowledge of this valuable Balsamic vinegar is passed on and preserved from generation to generation. In accordance with tradition, the only ingredients of an excellent Balsamic are boiled-down grape must and spirit vinegar. Oak, cherry and chestnut wood barrels are often used to age Aceto Balsamico di Modena IGP. The vinegar absorbs the aroma of the wood used during the aging process.
In this way, the type of wood used also contributes to the unique aroma and flavour of the Balsamic vinegar. GEFRO’s fine Aceto Balsamico di Modena IGP has a wonderful full-bodied bouquet thanks to the oak barrels it was aged in.

A perfect Aceto di Balsamico di Modena IGP always has a harmonic flavour balance of sweet and sour. The light acidity is perceived aromatically, its aroma is fresh and pleasant. The thick, creamy consistency of a Balsamic vinegar is a sign of its high quality due to its long aging process – the longer a Balsamic vinegar is stored, the thicker and more valuable it becomes.
